So easy and cheap to make!

Mash up some cooked pumpkin with eggs and ricotta, add salt, pepper and whatever herbs and spices you like. I like a bit of fresh grated nutmeg and some cinnamon to give it a spicy zing. I think I added some flour to make the filling have a bit more stick ability and body. Put some frozen puff pastry in a greased pie pan and spoon the mixture on top. Bake and serve.
Vegan alternative: use tofutti or silken soft tofu instead of ricotta and leave out the eggs.
